Snicker's Cheesecake | Recipe

For my Step Dad's Birthday, I decided to make him a cheese cake in  stead of a normal sponge cake, as a change and also because cheesecake's are his favourite. I decided I would try and make a, 'Snicker' Cheesecake' as Snicker's is also his favourite chocolate. It was the first time I have ever cooked cheesecake and I was quite surprised at the result as I thought it was very scrummy and everyone enjoyed it.

Ingredients

For The Base:
- 85g of Butter
- 140g of Digestive Biscuits
- 1 Tablespoon of Sugar

For The Cheese Filling

-300g of Philadelphia soft cheese
-250g Castor Sugar
-1 1/2 Tablespoons of Vanilla extract
-3 large eggs and 1 egg yolk
-200ml of cream

For the Topping
-Chocolate & Toffee Sauce
-Snickers bar

Preheat the oven to 160 Degrees and using baking parchment line the bottom of a cake tin, making sure all the sides are covered. In a small pan, melt the butter. Using a blender crush the biscuits and gradually add them to the pan on a low heat, then add in the sugar until its moist. Take the pan of the heat and line the bottom of the cake tin with the mixture, covering the bottom of the pan equally. The place in the oven for 10 minutes.

Remove the tin from the oven and increase the temperature to 200 degrees. In a large mixing bowl, add the Philadelphia, slowing adding in the sugar, flour, a pinch of salt. Then go onto to add the vanilla and eggs, whisking them into the mixture. Finally add in the cream, and mix until smooth, then evenly cover the base of the tin with the filling. (If you are worried about the mixture being quite liquidy then don't worry everything should be fine)

Replace the cake tin in the oven for 10 minutes, then reduce the temperature down to 90 degrees and leave it for 25 minutes. When the timers up, remove the cheesecake from the oven and let it cool for 2 hours.

Remove the cheesecake from the tin and place on a plate, and let it sit while you make the topping. Using a blender, blend a cold snickers bar, and put it to one side. Once the Cheesecake is set, you can add chocolate or toffee sauces if you choose, if not just sprinkle a layer of the snickers crumbs evenly on the surface and place in the fridge to cool overnight.
