Easy Peasy Mince Pies

Mince Pies are most certainly a Christmas staple, I make them almost every year (unless mum beats me to it). This year was no exception. Today I decided to go down the easy route, with a super easy recipe and having fun with the decorations.

Ingredients

Jar of Mince Meat
Ready to roll Short Crust pastry
Egg
Sugar

Equipment

Cookie Cutters
Rolling Pin
Cup Cake Baking Tray
Cooling Rack
Egg Brush
Mixing Bowl / Small Mug
Tea Spoon

1. Heat up the oven to 180 degrees (fan assisted ovens),

2. Unroll the pastry,

3, Using a circular cutter cut out 12 circles of pastry, placing each into a hole in the baking tray,

4. Once all 12 are on the baking tray, place in the oven and cook for 10 minutes

5. While the pastry is cooking, using different cookie cutters, cut out a shape to top each of the mince
pies, it could be a star, mistletoe or simple another full circular base, be creative and have fun.

6. When the pastry is cooked, remove the baking  tray from the oven fill each shell with mincemeat.

7. Then place then top the mince pie with a festive design

8. Crack and whisk an egg in a bowl or mug, and brush a layer of egg over each pie

9. I like to top my mince pies by sprinkling white granulated sugar on each pie

10. Then I replace the mince pies back in the oven for a further 10 minutes

11. When cooked and a nice golden brown, remove from the oven and place on a cooking rack

12. enjoy
